Pizza is worth spending that little extra time on. Taking the time to prepare your dough and let it ferment over a longer period pays dividends in the long run. Spending a little bit more time in preparation and planning will yield a pizza that will be quite simply better than anything you’ve had before.
I’ve spent the last three years dedicated to creating a pizza that will be enjoyed by all the family and have them coming back for more, and here it is for you to enjoy.

All about the dough?. Get the dough right and that’s the biggest battle out of the way. After that, you need to keep the toppings simple, don’t overload the pizza and you’re almost at the finish line.
Let’s start the dough process, this is based (more or less wholly) on Tony Gemignani’s recipe from his fantastic book The Pizza Bible (although I must confess that I’ve only used this recipe from the book so far).
I’m writing this recipe with a flour that’s readily available in the UK although I do from time to time try different flours as and when they become available in the shops – like the one below.
The above is a 00 flour I saw on a recent trip to the supermarket – my standard flour for pizza is Allinson’s Extra Strong Bread flour – which has a very high protein percent – 14% (especially compared to the 00 above which was only 10.2%).

Stunning pizza that is as good as you’ll get in any restaurant (in fact better), you won’t ever go back to crappy supermarket or takeaway pizza again.
